Homemade Lemon Tandoori Chicken Curry
Enjoy the flavors of a classic homemade curry with this easy recipe. The chicken thighs are marinated in a fragrant blend of tandoori seasoning which infuses them with incredible flavor. They are then air fried to perfection, resulting in juicy and tender chicken with a crispy exterior. Serve these flavorful chicken thighs with tandoori curry sauce, a side of fluffy basmati rice and garnish with fresh coriander for a delicious and satisfying meal.

Ingredients
- 6 Chicken Thighs
- 3 tbsp Tandoori Seasoning
- 200ml Double Cream
- 1L Chicken Stock
- 1 tbsp Ginger (grated)
- 2 cloves Garlic (minced)
- 1 Onion (finely chopped)
- 2 tbsp Coriander (chopped)
- 2 tsp Lemon Peel (grated)
- 2 tbsp Lemon Juice
- 2 tbsp Garlic Smoked Rapeseed Oil
Directions
- Slice your chicken thighs before dowsing them in oil and covering in Tandoori Seasoning and let them marinade for as long as you can be bothered. Refrigerate overnight for best results.
- Preheat the air fryer to 380°F (190°C).
- Add a generous helping of Smoked Garlic Rapeseed Oil to a pan on low-medium heat.
- Sweat off your onions, garlic, ginger and tandoori seasoning, before adding the chicken stock and a splash of cream.
- Simmer for 10 minutes before blending (hand-held or jug is fine)
- Meanwhile place the marinated chicken thighs in the air fryer basket, making sure they are not overcrowded.
- Air fry the chicken thighs for 18-20 minutes, or until they are cooked through and the skin is crispy. Toss around half way through to ensure even crispiness!
- Add the grated lemon peel and lemon juice to the sauce and stir through.
- Once the chicken thighs are cooked, remove them from the air fryer, chop them up and slap them in the sauce.
- Garnish with more cream, fresh coriander and enjoy!
