Homemade Flame-Grilled Peri Chicken Wraps
When you live in the stix it's hard to get your peri chicken fix. With this recipe you'll fall into a warm lake of pure ecstasy believe me i've made it.
It's a real easy one, very quick too so it's perfect for an after-work special and if you make extra chicken it makes epic lunches for the rest of the week. If you don't have a grill just adapt the recipe to air fryer. Toast the tortilla wraps in a dry pan, air fry the chicken, fry off the onions. It's no biggie.

Ingredients
- 1kg Boneless Skinless Chicken Thighs
- 2 fat squirts of Lemon Smoked Rapeseed Oil
- 1 tin of Perilicious Seasoning
- 2-3 Charred Limes
- 1 Grilled Onion (sliced)
- 6 Grilled Tortilla Wraps
- 1 fistful of Fresh Crunchy Lettuce
- 1 sprinkle of Lemon Smoked Salt
- 5 semi squirts of Mayo
Directions
- In a bowl, mix the chicken thighs with lemon smoked rapeseed oil, perilicious seasoning and a squirt of lime juice. Allow it to marinate for 30 minutes.
- If you’re in a rush, just give it 5 mins and a bit of a massage lol.
- Preheat the grill (or air fryer) over medium-high heat. Grill (or fry) the marinated chicken thighs for about 6-7 minutes per side or until fully cooked and charred.
- Meanwhile peel and slice an onion in half and slap on the grill. Pop your tortillas on the grill and also as many halved limes as you can muster.
- Dump your mayo in a lil bowl and add a small pinch of perilicious seasoning and the juice of a charred lime. Whip it together.
- After the chicken is cooked, let it rest for a few minutes before slicing into strips and drizzling in more lime juice and a pinch of lemon smoked sea salt
- To assemble the wraps, layer the grilled chicken, grilled onion, fresh lettuce, and limey mayo inside each tortilla wrap. Roll tightly and if you’re a badass pop it back on the grill to seal it!
- Serve immediately and give praise to the tubby gods for this valuable teaching.
