Mexican Style Cheesy Corn on the Cob

This epic twist on classic corn on the cob will rock your world and your fake friends might actually start liking you for real if you make this for them.
I usually make these on the grill but you could easily do them in the air fryer!

Ingredients
- 4 Corn on the Cobs (one each)
- 2 Limes
- 1 Drizzle of Smoked Chilli Oil
- Half a tin of La Cucaracha Lime x Chilli seasoning
- 1 handful of Parmesan cheese
- 4 squirts of mayonnaise
- 1 pinch of lemon smoked salt
- few springs of fresh coriander, chopped
Directions
- Preheat your grill (or air fryer) to medium-high heat.
- Whisk a splash of smoked chili oil and a pinch of la cucaracha seasoning into the mayo and slather each cob with the mixture.
- Grill the corn for about 10 minutes, turning occasionally until charred and cooked through.
- Sprinkle the Parmesan cheese on top and garnish with fresh coriander, lime juice and a final sprinkle of smoked salt before serving.
